Central Laboratory: Ensuring Food Safety & Quality in the Meat Industry Through Expert Testing & Rapid Results

Program: Applied Biotechnology Master's Degree — Business Management
Host Company: Central Laboratory
Location: Green Bay, Wisconsin (remote)
Student: Connor Westlake

My capstone project was a business plan. The objective of the business plan was to examine if Central Laboratory should upgrade or replace their current meat moisture, fat, and protein analysis method. Central Laboratory had previously tried to obtain an accreditation for meat, moisture, fat, and protein analysis, but the current method was inadequate. The business plan lays out the framework for potentially upgrading or replacing the current method by researching potential new methods, examining Central Laboratory’s strengths, weaknesses, opportunities, and threats, looking at competition in the market, developing a marketing plan, examining financial projections, overviewing any intellectual property and regulations, developing a portfolio strategy, and building the organizational management.
